Each Italian Region is characterized by very particular traditions and customs, which distinguish it clearly from the other territories of the peninsula. This also applies to weddings: these are really important events, especially in times gone by. As a result, the ceremony was accompanied by rituals and customs that emphasized its relevance. At the same time, even within a region, traditions can vary from area to area.
In Emilia Romagna, the typical confetti are replaced by zuccherini: these are shortcrust pastry baked in a wood oven. They are prepared in a ring shape, so as to symbolize the wedding rings and offer themselves to the guests to share them with the joy of the couple. Today they are also used as placeholders.
How to cook Emilian zuccherini
These cookies are prepared with:
- potato starch,
- aniseed or chopped bitter almonds,
- cold butter,
- extra virgin olive oil.
All the ingredients are mixed together and the dough has to be kneaded for 3 hours, periodically resting in the fridge. It is necessary to use each time only the quantity of pasta necessary to make a single zuccherino and to avoid the rest from heating up.
Based on the matrimonial traditions of the province of Bologna and Reggio Emilia, the zuccherini were made by relatives and girlfriends of the bride. The bride was excluded from the preparation of the biscuits because her presence was considered as a sign of bad luck. The preparation of the dough and biscuits were carried out in company, thanks to the participation of dozens of women of different ages.

In the province of Reggio Emilia it was obligatory for married couples to follow the strict rules regarding clothing. In fact, to have a lucky marriage, the brides had to wear:
- a new piece of clothing or a new accessory
- a loaned accessory
- a gift
- a blue thing
It was also believed that it could bring bad luck to look in the mirror once you had finished wearing a wedding dress, veil, accessories and everything else.
